Fairhaven Varieties

These are apple varieties developed by our own David Macgregor at Fairhaven Farm.

Apple breeding is a long and intimate process. New varieties emerge after several years and even decades of careful work. It requires manual pollination, seed collection, growing out seedling trees, a lot of taste testing, and assessing growing habits over the course of multiple seasons. Honeycrisp, for example, took 20-30 years to develop!

​With only three university breeding programs in the country and a limited amount of independent breeders, it is truly special to have the opportunity to create our own varieties. Our apple KinderKrisp was even written up in Saveur magazine. Check it out here!

CRABBY CRISP

Early variety cross between Honeycrisp and an unknown crabapple. It’s small size and crisp texture makes it perfect for kiddoes or those who struggle to eat a whole apple.

KINDERKRISP

Another earlier variety that’s a child of Honeycrisp. This apple has quickly become one our most popular apples on the farm. In recent years it’s actually left our shelves faster than Honeycrisp. It’s a perfect mid-sized apple with an explosize texture and swee-tart flavor.

INTENSITY

A cross of two Minnesota apple icons, Haralson and Honeycrisp. This apple combines the tartness and acidity of a Haralson with the explosive crispness and sweet flavor of a Honeycrisp. It a high-sugar, high-acid apple that is well, INTENSE. It’s also a top-notch pie apple. 

BLACK MAC

This is a truly gorgeous, galactic apple. I swear you can find galaxies staring into it's skin. Keep a keen eye out when these apples are ready because they go quick! Fantastically tart.

SHIZAM

This variety is a cross on Honeycrisp and Shizuka, a very sweet, low acid apple from Japan. This apple provides low acid alternative to varieties like Honeycrisp, Haralson, or even Zestar. It’s a hard apple with a satisfying crunch, and rich flavor with hints of anise
